Description
Backaldrin Ciabatta 5% is a bread premix ingredient for ciabatta and compatible focaccia, baguette and lavash recipes, supplied in a 10 kg pack. Its formulation includes wheat sourdough and flour, with barley malt extract and soy flour.
The 5% rate applies to the flour-based technical recipe; use that complete formula for the remaining ingredients and dough process. Contains wheat, barley and soy. The mix is intended to help prepare bread dough, not as a ready-to-bake dough or a gluten-free flour replacement.
