Backaldrin Chocolate Ganache Spread is a cocoa-based confectionery spread in a 5 kg professional pack for pastry fillings and dessert finishes. Its formula includes sugar, palm-kernel and sunflower oils, low-fat cocoa and soy lecithin.
The prepared spread gives a cocoa flavour for compatible cake layers, fillings and toppings. It is not a traditional ganache made solely from chocolate and dairy cream, so use a recipe suited to this spread's composition. Keep the container closed and follow its handling guidance.
